Opificio Nunquam is a small artisanal distillery in Tavola, within the municipality of Prato, Italy, operating since 1999. The workshop produces liquors without added colorants or natural aromas, using predominantly manual methods. Since 2007 it has recreated Vermouth Bianco di Prato following the original 1750 recipe. Owners Cristina and Fabio, with their daughter Lavinia and bartender Daniel Boccia, supervise all production stages. Herbs and spices, largely from biodynamic and organic cultivation, are macerated in steel containers with neutral organic alcohol and, for vermouth, Tuscan white wine. The range now includes amari, bitters, historical liquors, gins and five vermouths.
