SenrasDairy is an artisanal cheese producer located in Ribeirão, Portugal, established in 1983. The company makes cheeses exclusively from the milk of cows raised on its own family-run farm, with feed selected to achieve high-quality milk. Its range covers fresh cheeses; aged varieties matured for three and six months; buttery cheeses ripened one month; and soft cheeses with a pliable rind that appears yellowish when cut. Products are circular, with soft and creamy or semi-hard textures, and rinds that are uniform, fresh or dry, free of cracks and mold. Production is artisanal, using pasteurized cow's milk, dairy cultures, rennet, salt and lysozyme. The firm also produces artisanal chocolate and dulce de leche ice creams from its farm milk. Cheeses reach retailers, wholesalers, hypermarket chains and food service operators, and are exported worldwide.
